Ingredients
  

  • 1 lb boneless skinless chicken breast cut into bite-sized pieces
  • 1 cup cooked rice white, brown, or cauliflower
  • 1 cup mixed vegetables broccoli, bell peppers, carrots
  • 2 tbsp olive oil
  • 1/2 cup mayonnaise
  • 2 tbsp sriracha adjust to taste
  • 1 tbsp honey
  • 1 tsp garlic powder
  • 1 tsp lime juice fresh

  • Small mixing bowl
  • Rice cooker (optional)
  • Meat thermometer

Method
 

  1. Cook rice according to package directions and set aside. Start this first as it takes the longest.
  2. Cut chicken breast into uniform 1-inch pieces and season generously with salt and pepper.
  3. Heat olive oil in a large skillet over medium-high heat until hot.
  4. Add chicken pieces and cook 6-8 minutes, stirring occasionally, until golden brown and internal temperature reaches 165°F.
  5. While chicken cooks, whisk together mayonnaise, sriracha, honey, garlic powder, and lime juice in a small bowl. Taste and adjust seasoning.
  6. Add mixed vegetables to skillet with chicken and cook 2-3 minutes until just tender-crisp.
  7. Remove from heat and pour Bang Bang sauce over everything, stirring gently to coat. Serve over rice.

Notes

Use a meat thermometer to ensure chicken reaches 165°F. Don't overcrowd the skillet. Adjust sauce spice level to taste.
