- Cook rice according to package directions and set aside. Start this first as it takes the longest.
- Cut chicken breast into uniform 1-inch pieces and season generously with salt and pepper.
- Heat olive oil in a large skillet over medium-high heat until hot.
- Add chicken pieces and cook 6-8 minutes, stirring occasionally, until golden brown and internal temperature reaches 165°F.
- While chicken cooks, whisk together mayonnaise, sriracha, honey, garlic powder, and lime juice in a small bowl. Taste and adjust seasoning.
- Add mixed vegetables to skillet with chicken and cook 2-3 minutes until just tender-crisp.
- Remove from heat and pour Bang Bang sauce over everything, stirring gently to coat. Serve over rice.
Notes
Use a meat thermometer to ensure chicken reaches 165°F. Don't overcrowd the skillet. Adjust sauce spice level to taste.
