- In a medium bowl, whisk together 1 tablespoon soy sauce, ginger, garlic, and sesame oil. Add beef strips and toss to coat completely. Let marinate for 10-15 minutes while preparing other ingredients.
- Heat 1 tablespoon oil in a large skillet or wok over medium-high heat. Add sliced onions and cook for 5-6 minutes, stirring occasionally, until soft and lightly golden. Season with salt and pepper, then transfer to a plate.
- Increase heat to high and add 2 tablespoons oil to the same pan. When oil shimmers, add marinated beef in single layer. Sear undisturbed for 1-2 minutes, then stir-fry 1-2 minutes until browned.
- In small bowl, whisk together remaining 2 tablespoons soy sauce, hoisin sauce, rice vinegar, and cornstarch until smooth. Pour over beef and stir constantly for 1-2 minutes until sauce thickens.
- Return cooked onions to pan and toss everything together for 30 seconds until heated through and well combined. Serve hot over rice or noodles.
Notes
Slice beef thinly against grain for maximum tenderness. Use high heat for best sear. Can add bell peppers with onions for extra color and nutrition.
